My latest obsession: Acai Bowls

Good morning friends and followers!  I am thrilled to share with you my sure-fire way to guarantee a good morning – my favorite breakfast – Açai bowls.  Actually, it is a sure way to guarantee a good afternoon or evening too because I have been known to have these babies all day long!  Making an Açai bowl is super easy…just a blender and delicious, quality ingredients.  Creating this magic at home allows you to customize the ingredients, assure quality and try different consistencies until you get it perfect.


First up let’s talk ingredients – the key to making magic in the kitchen!

I know, I know, you have read this from me many times but here it is again.  Buy the highest quality ingredients you can find.   I use Sambazon no sugar added frozen açaí. This is organic, Fair Trade puree mixed with a little filtered water straight from Brazil.  You buy this frozen at your local health food store or can be ordered to arrive frozen.  This is the best I have been able to find and I love that it comes pre-portioned with four appropriate serving sizes. For people who like a bit of sweetness you can buy it with sugar added as well.

Topping choices and combinations are endless.  Almost any fruit works – blueberries, raspberries, blackberries, strawberries, bananas, kiwi, mango, papaya.  My mouth is watering!  Nuts are a must – hazelnuts, almonds, pistachios, walnuts, macadamia.  A tip on nuts, I prefer to sprout my nuts before using on Açai bowls as it adds a depth of flavor and digestibility. Definitely try sprinkling on some nut pulp (check out my nut milk article for more info!), granola, chia seeds, bee pollen, flax seeds, coconut.  Seriously, the options are endless which is why this breakfast staple won’t get boring.

Consistency – this is the fun part!

The aim is to have a scoopable smoothie.  It may take a few times to get this exactly how you like it.  I leave my frozen packet out on the counter for about 5 minutes before adding it to the blender with a bit of frozen banana and berries (I add some 100% coco powder when I am feeling chocolatey).  If it is too thick, just add a little filtered water or nut milk (   Check instructions here) to smooth out the consistency.  Just be careful as you don’t want Açai soup.  Oh wait, that sounds kind of good!  The key is to just keep trying until you get it the way YOU like it!  After you are done blending, grab your favorite bowl and pour it.  Top with delicious ingredients and, voilà, a nutrient and flavor packed meal or snack.

Here is my personal favorite:

To Sambazon no sugar added frozen açaí, add 1 ¼ cup frozen blueberries or mixed berries, 1 frozen banana, ½ cup nut milk, 1tbsp almond butter, 2tblsp hemp seeds, 2 scoops collagen peptides (can omit) and 1tblsp coconut oil (can omit). Blend and pour in a bowl.  Top with nuts, more fruit and cacao nibs.  A Lena Special – enjoy!
